Making soup, from the vegetables I had on hand: celery + fennel + cherry tomatoes; I added water and let it simmer with the vegetables so the browned bits in the pot and sweetness of the tomatoes created a broth. These chopped spinach and baby chard leaves were stirred in at the end, with the rice. Lastly the chopped parsley. And a little reserved parsley was to sprinkle over the dishes.
