Here is the recipe for the cod dish with onion, tomato & olives that I demonstrated on Wednesday August 19, as part of the Virtual Uplifting Party. You can still watch it on Facebook; message me with any questions.
- 1 piece fresh cod, approx 1lb; cut into 3-4 pcs
- 1 small or medium onion, sliced
- 2 medium tomatoes, or similar in varying sizes, sliced
- 1 tbsp Olive oil
- ¼ cup Olives, any kind
- Salt, pepper
Heat a large pan over medium-low; add 1 tbsp olive oil. Add the onion and tomato; cook, stirring occasionally, 5 minutes.
Add the cod pieces, season with salt & pepper; add the olives. Cook, covered, 10 minutes. Fish should be flaking apart easily, in large pieces.
