Leftovers strike again! Over the weekend I ordered in some Indian curries, including aloo gobi which is one of my favourites. But there was more than we could eat, so I made this salad the following day: crispy iceberg with cucumber tossed in a little balsamic vinaigrette, the leftover potatoes/cauliflower/sauce on the salad bed, topped with some raita I’d stirred together. A few sunflower seeds on top for crunch, and lunch was ready. And delicious. The slightly sweet balsamic offset the spices of the curry, and the crunchy lettuce & seeds worked with the soft vegetables.
