What do you think of this? Corn and peach salad: grilled corn, cut from the cob, mixed with slices of local peaches, parsley & mint from my garden, and red onion. Tossed with olive oil and lemon juice, and of course, coarse salt. We ate it as a salad, a side, but I think it would be great as a sandwich topper, or as part of a taco. With fish and lime, right?
