I recently bought some fresh, crisp plums, and was thinking about how we could enjoy them not simply out of hand, or in a typical fruit salad,but also not baked, either.
As usual, I made a salad!
I sliced the plums and a cucumber, and arranged them on a plate, but what next? This salad needed another fresh ingredient: herbs. I had parsley so I used it, but mint would have been nice, too.
A little olive oil drizzled over top, a few drops of balsamic vinegar to finish the dressing, and a spoonful of seeds for crunchy texture. Lastly, a sprinkling of salt and… ta-daa!
Cucumber-plum salad with lunch!
Cucumber-plum salad INGREDIENTS
- 2-3 fresh plums, sliced in half, stone removed, and thinly sliced
- 1 English cucumber, sliced in half lengthwise, and thinly sliced a similar thickness to the plum slices
- 3 sprigs fresh parsley, leaves and stems chopped
- 1/4 cup salted sunflower seeds
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt, to taste
METHOD
Add all the salad ingredients to a medium bowl and toss to coat in the dressing. Serve immediately.
