How beautiful are these beans?
They were at the store this week and I couldn’t resist. I brought them home and praised their beauty, but my family did not appreciate them as much as I did.
I broke open a pod to expose the spotted gems inside and the reaction was only slightly better. But nothing like as excited and enthusiastic as I was. And am!
So I emptied all the pods and cooked the beans for about 30 minutes. I tossed them in garlic oil with a few cherry tomatoes, and sprinkled some coarse salt and pepper over them.
When I put them on the table to accompany our dinner, they disappeared. And not because somebody was being clever and hid the bowl when I wasn’t looking.
Apparently these fresh speckled beans taste really good. Even if you do not appreciate how nice they look, too.
